Brats with peppers and onions in buns

How to make it

  1. In a wide pan, melt the butter and soften the onion and peppers over medium heat for 5 minutes.
  2. Add the beer and the brats. Bring to a gentle simmer, never a hard boil, and cook 15 minutes.
  3. Move the brats to a medium-hot grill and turn until browned on all sides and 160°F inside, about 8 to 10 minutes.
  4. Keep simmering the peppers and onions until the beer cooks down. Pile them on the brats in toasted buns.
From the counter: No grill? Brown the simmered brats in a hot cast iron skillet instead.
